Brine! I hear some people don’t heat their brine mix, but I find it’s the best way to get all the flavors into the water.
- Enough water to submerge the poultry of your choice.
- 1/4 cup salt
- 1/4 cup sugar
- 1/2 onion
- 3 garlic cloves
- Tablespoon of whole black peppercorns
- A bit of lemon juice 🍋
- 1 clove
- Fresh thyme and rosemary sprigs
Boil for at least 5 min so everything dissolves together and the flavors from the vegetables start to pull into the water. Turn off the heat after 5 min of boiling. Let cool completely before submerging the bird. 🦃
