Roasting a chicken is easy. Making the flavors interesting is always a fun challenge. For this glaze I melted down some butter and added some minced ginger, zest of lime, salt, pepper and a little olive oil. I let it get hot enough for the butter to just start to bubble and I reduce the heat and start to brush the sauce onto the chicken. This really gives the skin a nice crispy and tangy flavor and is especially nice when you put a few sliced limes inside the roast chicken when it’s cooking.
